Delicious and creamy Veggie Soup
- 1 cup broccoli (fresh or frozen)
- 1 stack celery (chopped)
- 1/4 cup chopped carrot
- 1 onion
- 1 clove of garlic
- 1/2 cup green peas
- 1 cup cooked Quinoa
- 1/4 cup milk or non dairy milk( soy milk, almond milk etc.)
- 1 cup vegetable stock
- 1 Tbs olive oil
- salt and pepper and other spices to your taste
Start cooking Quinoa with 2 cups of water for 15 minutes or until the water is absorbed. Now chop all the veggies into small pieces and start to sauté the garlic and onion with the ovile oil until golden brown in a pot.
Add the chopped carrot, celery and broccoli and cook until soft. After that add the vegetable stock and purée until creamy. Pour in the milk, add the green peas, cooked Quinoa and flavor with salt and pepper and other spices. Cook for another 3 minutes and you are ready!
